Hemp Caesar Wrap

There are a lot of ways to make a Caesar dressing, and I’ve yet to try making it the traditional way with anchovy fillets. The version of Caesar dressing I’m sharing with you today, the one I’ve been making on repeat this year, calls for hemp seeds instead of nuts and cheese. This gives it a higher protein content while still creating a creamy texture with a mild, nutty and slightly earthy taste. Hemp seeds are generally considered healthy because they are minimally processed whole foods that provides substantial protein, containing all nine amino acids, healthy fats (omega 3 & 6), and many minerals. I wouldn’t call them a superfood, but including a tablespoon or two a day as part of a varied diet can help boost protein and nutrient intake.

Many of the sauces I’m sharing this summer as part of the Seven Sauces for Summer blogs will call for hemp seeds, so you’ll have plenty of opportunities to use the bag you buy at the store.

This meal is really simple. It takes only 15 minutes to make the dressing and assemble the wrap. It’s an easy lunch that you can have for the entire week!

Ingredients (for the week):

  • 1 package of tortillas (see note below)

  • 1 rotisserie chicken, shredded

  • 10 oz fresh spinach

  • Pumpkin seeds (optional)

Hemp Caesar Dressing:

  • 1/3 cup shelled hemp seeds (also known as hemp hearts)

  • 1/3 cup olive oil

  • 3 Tbsp tahini

  • 1 Tbsp Dijon

  • 2 Tbsp lemon juice (about 1 whole lemon)

  • 1 - 2 garlic cloves

  • 2 tsp fish sauce

  • ½ tsp pink Himalayan salt

  • freshly ground black pepper

Note: My favorite tortillas I’ve found at the local Sprouts with clean ingredients and no seed oils are the brand Vista Hermosa. I like to toast these over an open flame on my gas stovetop.

Instructions:

  1. Place all the Hemp Caesar dressing ingredients into a blender and blend until smooth. Taste and adjust salt, pepper and lemon juice to your liking. Pour into a glass jar to keep in your fridge for about a week.

  2. Chop a large handful of fresh spinach. Add the spinach, a handful of rotissery chicken, a spoonful of pumpkin seeds, and a couple spoonfuls of Caesar dressing to a medium bowl. Mix until the Caesar dressing is well incorporated throughout.

  3. Warm tortilla(s) on an open flame burner, or on a cast iron skillet.

  4. Place the Caesar chicken and spinach salad on the tortilla and wrap. Enjoy!
